About 2 years ago I was diagnosed with an autoimmune disease.  To say it has been life changing is an understatement.   One of the suggestions from my doctor was to change the way I eat and she suggested I read Dr Fuhrman’s book “Eat to Live”.   What he said made sense and it also went along with the way Tom and I were thinking in moving away from eating animals.  It just did not feel right eating something that had feelings.     So in July of 2016  we made the leap and started our plant based diet.    To say the food was wonderful would be so so very wrong.  It was AWFUL.    Learning to cook this new way was completely different, especially since I was trying to limit things like salt and oil.    To my son and his friend from college who stayed with us that summer, I apologize so very much.   You are amazing young men to eat that food and not complain once.

It gets better though.  It just so happened that we needed to go to Portland for business and while we were there we decided to try a few vegan places to get an idea of how to cook this way.   If you are ever in the area I highly recommend Farm Spirit or Harvest at the Bindery.  Both are a completely different experience and both have absolutely FABULOUS food.   They really showed us how tasty vegan food could be and gave us hope.   With that we started looking to find recipes on the internet and found many that are both tasty and pleasing to the eye and from that have been able to learn to cook a whole new way and enjoy healthy flavorful meals which we hope to share with you on these pages.
